Spinach casserole

Here's a simple and delicious spinach casserole recipe for you:

Ingredients:

  • 1 lb fresh spinach (or 2 cups frozen spinach, thawed and drained)
  • 1 cup ricotta cheese
  • 1 cup cottage cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 3 large eggs
  • 1/2 cup breadcrumbs (optional)
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1/4 teaspoon nutmeg (optional)
  • Olive oil

Instructions:

  1. Preheat the oven to 350°F (175°C).

  2. Sauté the spinach: In a large skillet, heat a bit of olive oil over medium heat. Add the chopped onion and garlic, cooking until the onion is translucent. Add the fresh spinach and cook until wilted. If using frozen spinach, make sure it’s thoroughly drained and heated.

  3. Mix the filling: In a large bowl, combine the ricotta cheese, cottage cheese, half of the mozzarella cheese, Parmesan cheese, eggs, salt, pepper, and nutmeg (if using). Stir in the sautéed spinach mixture.

  4. Prepare the baking dish: Grease a 9x13-inch baking dish. If using breadcrumbs, sprinkle them on the bottom of the dish.

  5. Assemble the casserole: Pour the spinach mixture into the prepared baking dish. Top with the remaining mozzarella cheese and sprinkle additional breadcrumbs on top if desired.

  6. Bake: Bake for about 30-35 minutes, or until the cheese is melted and bubbly, and the casserole is set.

  7. Serve: Let it cool for a few minutes before slicing and serving.
